Cookie Dough
- ½ cup (113 g) cold unsalted butter, cubed
- 1½ cups (300 g) granulated sugar
- 2 large eggs, room temperature
- 2 teaspoons (10 ml) almond extract
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 3 cups (360 g) almond flour
Topping
- ¼ cup sliced almonds for topping
Instructions
- Preheat Oven: Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
- Mix Ingredients: In a large bowl, cream together the butter and sugar. Add eggs, almond extract, vanilla extract, and salt. Gradually mix in the almond flour until well combined.
- Form Cookies: Roll the dough into small balls and place them on the baking sheet. Flatten each ball slightly and top with sliced almonds.
- Bake: Bake for 12-15 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheet before transferring to a wire rack to cool completely.
Notes
- You can substitute almond flour with regular all-purpose flour for a different texture.
- For a sweeter cookie, you can add more sugar to the dough.
