Description

These almond butter cookies are rich and nutty, with a hint of sweetness. Perfect for a snack or dessert, they are easy to make and even easier to enjoy.

Ingredients

Scale

Cookie Dough

  • ½ cup (113 g) cold unsalted butter, cubed
  • 1½ cups (300 g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons (10 ml) almond extract
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 3 cups (360 g) almond flour

Topping

  • ¼ cup sliced almonds for topping

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. Mix Ingredients: In a large bowl, cream together the butter and sugar. Add eggs, almond extract, vanilla extract, and salt. Gradually mix in the almond flour until well combined.
  3. Form Cookies: Roll the dough into small balls and place them on the baking sheet. Flatten each ball slightly and top with sliced almonds.
  4. Bake: Bake for 12-15 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheet before transferring to a wire rack to cool completely.

Notes

  • You can substitute almond flour with regular all-purpose flour for a different texture.
  • For a sweeter cookie, you can add more sugar to the dough.
