Ingredients

Scale

Dry Ingredients

  • 1/4 cup almond flour
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tablespoons cornstarch
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 1/4 teaspoons almond extract

Almond Icing

  • 2/3 cup powdered sugar
  • 1 tablespoon milk
  • 1/4 teaspoon almond extract
  • 2 tablespoons sliced almonds for topping

Instructions

  1. Preheat Oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Mix Dry Ingredients: In a bowl, whisk together almond flour, all-purpose flour, cornstarch, baking soda, baking powder, and salt.
  3. Cream Butter and Sugar: In a separate bowl, cream together butter and sugar until light and fluffy. Add egg, vanilla extract, and almond extract, and mix well.
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  5. Shape Cookies: Roll the dough into balls and place them on the prepared baking sheets. Flatten each ball slightly with the bottom of a glass.
  6. Bake: Bake the cookies for about 10-12 minutes, or until the edges are lightly golden.
  7. Make Almond Icing: In a bowl, mix powdered sugar, milk, and almond extract until smooth. Drizzle the icing over the cooled cookies and top with sliced almonds.

Notes

  • You can customize the icing by adding food coloring for a festive touch.
  • Feel free to add more sliced almonds or other nuts for extra crunch.
