Instructions
- Preheat Oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Mix Dry Ingredients: In a bowl, whisk together almond flour, all-purpose flour, cornstarch, baking soda, baking powder, and salt.
- Cream Butter and Sugar: In a separate bowl, cream together butter and sugar until light and fluffy. Add egg, vanilla extract, and almond extract, and mix well.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Shape Cookies: Roll the dough into balls and place them on the prepared baking sheets. Flatten each ball slightly with the bottom of a glass.
- Bake: Bake the cookies for about 10-12 minutes, or until the edges are lightly golden.
- Make Almond Icing: In a bowl, mix powdered sugar, milk, and almond extract until smooth. Drizzle the icing over the cooled cookies and top with sliced almonds.
