Tangzhong:

  • 1/3 cup 76g Water
  • 2 Tablespoons 15g Bread Flour

Yeast Mixture:

  • 1/2 cup 113g Whole Milk
  • 1 3/4 Teaspoons 6g Active Dry Yeast
  • 1 Teaspoon Light Brown Sugar

Dough:

  • 2 3/4 cups 330g Bread Flour
  • 1/4 cup 50g Light Brown Sugar
  • 3 Tablespoons 42g Unsalted Butter
  • 1 Large Egg
  • 1/2 Teaspoon Fine Sea Salt

Cheesecake Filling:

  • 6 ounces 170g Full-Fat Cream Cheese
  • 1/4 cup 56g Full-Fat Sour Cream
  • 3/4 cup 85g Powdered Sugar
  • Lemon Zest of half a Large Lemon

Streusel Topping:

  • 1/2 cup 60g All-Purpose Flour
  • 2 Tablespoons 25g Brown Sugar
  • 2 Tablespoons 25g White Granulated Sugar
  • 3/4 Teaspoon Cinnamon
  • 3 Tablespoons 42g Salted or Unsalted Butter

Instructions

  1. Apple Filling: Melt butter and sauté apples with brown sugar, lemon juice, and cinnamon until tender. Create a cornstarch slurry, thicken the filling, stir in vanilla, and cool.
  2. Tangzhong: Whisk water and bread flour, cook until thickened, cool.
  3. Yeast Mixture: Bloom yeast in warm milk with sugar.
  4. Dough: Combine ingredients, knead, let rise until doubled.
  5. Cheesecake Filling: Beat cream cheese, add sour cream, sugar, lemon zest, and vanilla. Refrigerate.
  6. Streusel Topping: Mix dry ingredients, add cold butter, form crumbs, set aside.
  7. Assemble the Buns: Divide dough, shape into balls, let rise, brush with egg wash, fill with cheesecake and apple filling, sprinkle streusel, bake until golden.
