  • 2 bay leaves
  • 1 tablespoon dried parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon Cajun seasoning
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon dried sage
  • 1 pound andouille sausage, sliced
  • 4 cups water
  • 2 cups long grain white rice

Instructions

  1. Prepare the Beans: Rinse and soak kidney beans overnight. Drain and set aside.
  2. Saute Vegetables: In a large pot, heat olive oil and saute onion, bell pepper, celery, and garlic until softened.
  3. Cook the Beans: Add soaked beans, water, bay leaves, parsley, thyme, Cajun seasoning, cayenne pepper, and sage. Simmer until beans are tender.
  4. Add Sausage: Stir in sliced andouille sausage and cook for additional flavor.
