Main Ingredients:

  • 6 slices thick-cut bacon, chopped
  • 1/2 large onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 4 cups cooked and cooled long-grain rice (preferably day-old)
  • 3 large eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • 2 green onions, chopped

Instructions

  1. Cook Bacon: In a large skillet, cook the chopped bacon until crispy. Remove and set aside, leaving the bacon drippings in the pan.
  2. Sauté Aromatics: In the same skillet, sauté onions and garlic until fragrant.
  3. Add Veggies and Rice: Stir in frozen peas and carrots, then add cooked rice. Stir-fry until heated through.
  4. Scramble Eggs: Push the rice to one side of the pan and scramble the eggs on the other side.
  5. Combine Ingredients: Once the eggs are cooked, mix everything together in the skillet.
  6. Season and Serve: Add soy sauce, oyster sauce, sesame oil, salt, and pepper. Stir well and garnish with chopped green onions before serving.

Notes

  • You can customize this recipe by adding other veggies like bell peppers, mushrooms, or broccoli.
  • For extra flavor, you can add a dash of sriracha or chili flakes.
  • If you prefer a vegetarian version, you can omit the bacon and add tofu or tempeh for protein.
