- 2 pounds boneless skinless chicken thighs
- 2 tablespoons plus 2 teaspoons olive oil
- 1 tablespoon plus 1 teaspoon balsamic vinegar
- 2–1/2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper (2 tsp fine salt; 1-1/2 tsp pepper)
Instructions
- Preheat oven to 425°F. Line a large sheet pan with foil and pat dry the chicken thighs.
- In a small bowl, whisk together olive oil, balsamic vinegar, chili powder, cumin, garlic powder, and paprika. Season the chicken thighs with the mixture.
- Arrange chicken thighs on the sheet pan and bake for 15 minutes.
- Move the oven rack, switch to broil, and cook for another 7-10 minutes until caramelized.
- Remove from oven, let rest, and brush with pan juices before serving.
