Main Ingredients:
- 2 pints cherry tomatoes or grape tomatoes
- 8-ounce block of feta cheese creamy type (or Boursin cheese)
- 1/2 cup extra virgin olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup pasta reserved cooking liquid or Arrabiata sauce
- 8 ounces fusilli pasta or another pasta of choice
Additional Ingredients:
- 3 garlic cloves minced
- 1/4 cup packed chopped fresh basil
- A pinch of red pepper flakes
- 1/4 cup chopped parsley
Instructions
- Preheat the oven: Preheat the oven to 400°F.
- Prepare the ingredients: In a baking dish, combine cherry tomatoes, feta cheese, olive oil, salt, and black pepper. Toss to coat.
- Bake: Bake for 30 minutes until tomatoes burst and feta cheese is melted.
- Cook the pasta: In the meantime, cook the pasta according to package instructions.
- Combine: Once the tomatoes and feta are done, add garlic, basil, red pepper flakes, parsley, and the Arrabiata sauce or reserved pasta cooking liquid. Mix well.
- Serve: Add the cooked pasta to the baking dish and toss to combine. Garnish with additional basil and enjoy!
