Description

Main Ingredients:

  • 2 pints cherry tomatoes or grape tomatoes
  • 8-ounce block of feta cheese creamy type (or Boursin cheese)
  • 1/2 cup extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup pasta reserved cooking liquid or Arrabiata sauce
  • 8 ounces fusilli pasta or another pasta of choice

Additional Ingredients:

  • 3 garlic cloves minced
  • 1/4 cup packed chopped fresh basil
  • A pinch of red pepper flakes
  • 1/4 cup chopped parsley

Instructions

  1. Preheat the oven: Preheat the oven to 400°F.
  2. Prepare the ingredients: In a baking dish, combine cherry tomatoes, feta cheese, olive oil, salt, and black pepper. Toss to coat.
  3. Bake: Bake for 30 minutes until tomatoes burst and feta cheese is melted.
  4. Cook the pasta: In the meantime, cook the pasta according to package instructions.
  5. Combine: Once the tomatoes and feta are done, add garlic, basil, red pepper flakes, parsley, and the Arrabiata sauce or reserved pasta cooking liquid. Mix well.
