Description

Tender chicken breasts seasoned with a flavorful spice rub and glazed with a sweet and tangy honey dijon sauce, baked to perfection for a delicious meal.

For the Chicken:

  • 4 large chicken breasts boneless, skinless

For the Chicken Rub:

  • 1 and 1/2 tbsp (20 ml) olive oil
  • 2 tsp garlic powder
  • 1 and 1/2 tsp chili powder
  • 1 and 1/4 tsp kosher salt
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp chipotle chili powder (optional, to taste)

For the Homemade Honey Dijon Glaze:

  • 1/3 cup (110 g) liquid honey
  • 1 tbsp (15 g) Dijon mustard
  • 1 tbsp (15 g) yellow mustard
  • 1 tbsp (15 g) lemon juice
  • 1 tbsp (15 g) apple cider vinegar (or white vinegar or more lemon juice)

Instructions

  1. Prepare the Chicken Rub: In a small bowl, combine all the spices and olive oil. Rub this mixture evenly over the chicken breasts.
  2. Make the Honey Dijon Glaze: In another bowl, whisk together the honey, Dijon mustard, yellow mustard, lemon juice, and apple cider vinegar.
  3. Bake the Chicken: Place the seasoned chicken breasts in a baking dish and brush them with the honey dijon glaze. Bake in a preheated oven at 375°F (190°C) for about 25-30 minutes or until the chicken is cooked through.
  4. Serve: Serve the baked honey dijon chicken hot with your favorite sides.

Notes

  • You can adjust the spice levels in the rub by adding more or less chipotle chili powder.
  • Make sure to baste the chicken with the glaze during baking to keep it moist and flavorful.
