Sauce:

- 2 1/2 cups panko breadcrumbs
- 1 3/4 teaspoons kosher salt
- 1 teaspoon garlic powder
- 1 3/4 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 cup neutral oil
- Thinly sliced scallions, for serving (optional)
Instructions
- Prepare the sauce: In a bowl, mix mayonnaise, sweet chili sauce, and 2 teaspoons of Sriracha. Set aside.
- Bread the chicken: In separate bowls, place beaten eggs, flour, and breadcrumbs mixed with salt and garlic powder. Dip chicken pieces in flour, then egg, and coat with breadcrumbs.
- Fry the chicken: Heat oil in a pan, fry chicken until golden brown and cooked through.
- Coat the chicken: Toss fried chicken in the prepared sauce until well coated.
- Serve: Garnish with scallions and enjoy!
