Ingredients

Units Scale

Sauce:

    • 1/2 cup mayonnaise
    • 1/4 cup sweet chili sauce
    • 2 1/2 teaspoons Sriracha hot sauce

Chicken:

  • 2 large eggs
  • 2 tablespoons all-purpose flour
  • 2 1/2 cups panko breadcrumbs
  • 1 3/4 teaspoons kosher salt
  • 1 teaspoon garlic powder
  • 1 3/4 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup neutral oil
  • Thinly sliced scallions, for serving (optional)

Instructions

  1. Prepare the sauce: In a bowl, mix mayonnaise, sweet chili sauce, and 2 teaspoons of Sriracha. Set aside.
  2. Bread the chicken: In separate bowls, place beaten eggs, flour, and breadcrumbs mixed with salt and garlic powder. Dip chicken pieces in flour, then egg, and coat with breadcrumbs.
  3. Fry the chicken: Heat oil in a pan, fry chicken until golden brown and cooked through.
  4. Coat the chicken: Toss fried chicken in the prepared sauce until well coated.
  5. Serve: Garnish with scallions and enjoy!

Notes

  • Adjust Sriracha amount for more or less heat.
  • For a healthier option, try baking the breaded chicken instead of frying.
