Description

These BBQ Pineapple Chicken Kabobs are a perfect blend of sweet and savory flavors. Tender chicken, juicy pineapple, and colorful veggies are marinated in a delicious sauce and grilled to perfection.


Ingredients

  • 2/3 cup barbecue sauce
  • 2/3 cup teriyaki sauce
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger

Kabobs:

  • 2 pounds boneless skinless chicken breasts, cut into 1-inch chunks
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, cut into 1 1/2-inch pieces
  • 1 sweet onion, cut into 1 1/2-inch pieces
  • 2 tablespoons canola oil
  • Kosher salt and freshly ground black pepper, to taste

Instructions

  1. Marinate: In a bowl, mix barbecue sauce, teriyaki sauce, garlic, and ginger. Add chicken chunks, cover, and refrigerate for at least 1 hour.
  2. Skewer: Thread marinated chicken, pineapple, bell pepper, and onion onto skewers.
  3. Grill: Brush kabobs with oil, season with salt and pepper, then grill over medium heat until chicken is cooked through, about 10-15 minutes.
