Description

Ingredients

Mascarpone cream:

  • 16 oz Mascarpone cheese (450g), cold from the fridge – I recommend Galbani
  • 4 egg yolks
  • ⅔ cup granulated or caster sugar (133g)*
  • 1 tsp vanilla
  • ¼ tsp salt
  • 1 ½ cup heavy cream, chilled (360g) OR 4 egg whites

Assembly:

  • 3036 ladyfingers*
  • 1 ½ cup strong black coffee, room temperature (360g)*
  • 2 tbsp cocoa powder to dust

Instructions

  1. Prepare Mascarpone cream: In a bowl, combine Mascarpone cheese, egg yolks, sugar, vanilla, and salt. Whip heavy cream until stiff peaks form. Gently fold the whipped cream into the Mascarpone mixture.
  2. Assemble Tiramisu: Dip ladyfingers in coffee and layer them in a dish. Spread half of the Mascarpone cream over the ladyfingers. Repeat with another layer of ladyfingers and cream. Dust with cocoa powder.

Notes

  • For a stronger coffee flavor, add a shot of espresso to the coffee mixture.
  • Allow the Tiramisu to chill in the fridge for at least 4 hours before serving for the best taste and texture.
