This easy-to-make, creamy, cheesy dip is perfect for parties and gatherings. With Velveeta, Rotel tomatoes and chilies, ranch seasoning, and optional sausage, it delivers the right amount of spice and a creamy texture that everyone loves.
Ingredients
- Velveeta cheese (cubed) – 8 oz (half a block)
- Rotel tomatoes and green chilies (drained) – 10 oz can
- Ranch dressing mix – 1 packet (approximately 1 oz)
- Cream cheese – 8 oz (1 package)
- Ground sausage (optional, adds flavor) – 1/2 lb (8 oz)
- Sour cream – 1/2 cup (4 oz)

Brown the Sausage
Brown the sausage in a skillet over medium heat. Skip this step if not using sausage. -
Mix the Cheese and Cream Cheese
In a large pot or slow cooker, combine Velveeta and cream cheese. Heat over low heat, stirring until smooth. -
Add the Rotel and Sausage (if using)
Stir in the drained Rotel tomatoes and cooked sausage (if using). Mix well. -
Stir in the Ranch Seasoning and Sour Cream
Add the ranch seasoning mix and sour cream. Stir well and let it simmer on low heat for about 5 minutes. -
Serve and Enjoy
Serve warm with chips, crackers, or veggies for dipping.
Notes
- For a smoother dip, blend it after cooking to remove sausage or tomato chunks.
- For a lighter version, try reduced-fat cream cheese, sour cream, or Greek yogurt.
