- 1 lb boneless, skinless chicken breast or thighs, diced
- 1 tbsp olive oil
- Salt and pepper, to taste
- 2 cloves garlic, minced
- 1 cup uncooked orzo
- 2 1/4 cups chicken broth
- 1 (5.2 oz) package Boursin garlic & herb cheese
- 1 cup cherry tomatoes, halved
- 1 zucchini, diced
- 1 cup baby spinach
- 1/4 cup grated Parmesan cheese (optional)
- Fresh basil or parsley, for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a large oven-safe skillet or baking dish, heat olive oil over medium heat. Add chicken, season with salt and pepper, and cook until browned. Remove and set aside.
- In the same pan, add garlic and toast for 30 seconds. Stir in orzo and toast for 1 minute.
- Add chicken broth and bring to a simmer. Stir in zucchini and cherry tomatoes, then nestle in Boursin cheese in the center.
- Return chicken to the dish and mix slightly. Cover with foil and bake for 20 minutes.
- Uncover, stir in spinach and Parmesan (if using), then bake uncovered for another 5–10 minutes until creamy and orzo is tender.
- Garnish with fresh herbs and serve hot.
Notes
- Swap veggies based on what you have—mushrooms, bell peppers, or broccoli work great.
- Use rotisserie chicken for a shortcut.
- For extra richness, add a splash of cream when stirring in the spinach.
