Main Ingredients:
- 20 ounces (600 g) potatoes, peeled & cut into 1/2 inch cubes
- 1 pound Italian sausage
- 1 onion, diced
- 1 red pepper, diced
- 3 garlic cloves, minced
- 2 cups shredded mild cheese (mozzarella or mild cheddar)
- 6 large eggs
- 1/3 cup milk
- 1/4 teaspoon black pepper
- sliced green onion
Instructions
- Preheat oven: Preheat oven to 375 degrees F. Cook the potato dices in salted boiling water for about 5 minutes. Drain and let cool.
- Cook sausage: Remove sausage casings and cook in a skillet until browned. Remove from skillet.
- Cook vegetables: Cook onion, red pepper, and garlic in sausage grease. Transfer to a baking dish.
- Prepare egg mixture: Whisk together eggs, milk, black pepper, and 1.5 cups of cheese. Pour over the sausage and vegetables.
- Bake: Sprinkle remaining cheese on top, cover with foil, and bake for 20 minutes. Uncover and bake for an additional 10-15 minutes.
- Serve: Let casserole rest, garnish with green onion, and serve hot.
Notes
- You can use any kind of breakfast sausage for the recipe – spicy is good.
- You can prepare this casserole the night before and bake in the morning.
