Description

This Breakfast Casserole with Eggs, Potatoes and Sausage is a delicious and comforting dish perfect for a hearty breakfast or brunch. It’s loaded with flavorful Italian sausage, tender potatoes, and gooey cheese, making it a satisfying meal for the whole family.

Main Ingredients:

  • 20 ounces (600 g) potatoes, peeled & cut into 1/2 inch cubes
  • 1 pound Italian sausage
  • 1 onion, diced
  • 1 red pepper, diced
  • 3 garlic cloves, minced
  • 2 cups shredded mild cheese (mozzarella or mild cheddar)
  • 6 large eggs
  • 1/3 cup milk
  • 1/4 teaspoon black pepper
  • sliced green onion

Instructions

  1. Preheat oven: Preheat oven to 375 degrees F. Cook the potato dices in salted boiling water for about 5 minutes. Drain and let cool.
  2. Cook sausage: Remove sausage casings and cook in a skillet until browned. Remove from skillet.
  3. Cook vegetables: Cook onion, red pepper, and garlic in sausage grease. Transfer to a baking dish.
  4. Prepare egg mixture: Whisk together eggs, milk, black pepper, and 1.5 cups of cheese. Pour over the sausage and vegetables.
  5. Bake: Sprinkle remaining cheese on top, cover with foil, and bake for 20 minutes. Uncover and bake for an additional 10-15 minutes.
  6. Serve: Let casserole rest, garnish with green onion, and serve hot.

Notes

  • You can use any kind of breakfast sausage for the recipe – spicy is good.
  • You can prepare this casserole the night before and bake in the morning.
