Main Ingredients:
- 4 slices Center Cut Bacon
- 1 White Onion, finely diced
- 1 Poblano or Bell Pepper, finely diced
- 2 cloves Garlic, minced or grated
- 1 pound (raw) Turkey Breakfast Sausage*
- 1 packet Chili Seasoning
- 28 oz can Fire Roasted Crushed Tomatoes
- 3–4 cups Beef Broth, to desired consistency
Instructions
- Cook Bacon: In a large pot, cook the bacon until crispy. Remove and crumble it, leaving the bacon fat in the pot.
- Saute Aromatics: Add onion, pepper, and garlic to the pot. Cook until softened.
- Add Sausage: Brown the turkey sausage in the pot, breaking it into crumbles.
- Season and Simmer: Stir in chili seasoning, crushed tomatoes, and beef broth. Simmer for 20-30 minutes.
- Add Eggs: Make wells in the chili and crack eggs into them. Cover and cook until eggs are set.
- Serve: Garnish with crumbled bacon and enjoy hot.

- You can adjust the spice level by using mild or hot chili seasoning.
