Description

Main Ingredients:

  • 4 slices Center Cut Bacon
  • 1 White Onion, finely diced
  • 1 Poblano or Bell Pepper, finely diced
  • 2 cloves Garlic, minced or grated
  • 1 pound (raw) Turkey Breakfast Sausage*
  • 1 packet Chili Seasoning
  • 28 oz can Fire Roasted Crushed Tomatoes
  • 34 cups Beef Broth, to desired consistency

Instructions

  1. Cook Bacon: In a large pot, cook the bacon until crispy. Remove and crumble it, leaving the bacon fat in the pot.
  2. Saute Aromatics: Add onion, pepper, and garlic to the pot. Cook until softened.
  3. Add Sausage: Brown the turkey sausage in the pot, breaking it into crumbles.
  4. Season and Simmer: Stir in chili seasoning, crushed tomatoes, and beef broth. Simmer for 20-30 minutes.
  5. Add Eggs: Make wells in the chili and crack eggs into them. Cover and cook until eggs are set.
  6. Serve: Garnish with crumbled bacon and enjoy hot.

  • You can adjust the spice level by using mild or hot chili seasoning.
