Description

This Bruschetta Pasta Salad is a refreshing and flavorful dish combining the classic flavors of bruschetta with pasta. The juicy tomatoes, fresh basil, and tangy balsamic vinegar glaze make this salad a perfect summer side or light main course.

Bruschetta Pasta Salad:

  • 4 Vine Ripen Tomatoes, or any variety, diced
  • 1/2 small Red Onion, diced
  • 2 tbsp Fresh Basil, chopped, plus more for garnish
  • 1 Clove Garlic, minced
  • 1/2 tsp Oregano
  • 1/4 tsp Fine Sea Salt, more or less to taste
  • 1/4 tsp Black Pepper
  • 5 tbsp Extra-Virgin Olive Oil, divided
  • Parmesan Cheese, Burrata, Crumbled Feta or Goat Cheese, as desired, optional
  • 3 tbsp Balsamic Vinegar Glaze, as desired
  • 500 g Spaghetti Pasta, or pasta of choice

Instructions

  1. Prepare the Ingredients: Dice the tomatoes, red onion, and fresh basil. Mince the garlic.
  2. Make the Dressing: In a small bowl, combine the minced garlic, oregano, salt, pepper, and 4 tbsp of olive oil. Mix well.
  3. Assemble the Salad: In a large bowl, combine the diced tomatoes, red onion, and fresh basil. Pour the dressing over the mixture and toss to combine.
  4. Cook the Pasta: Cook the spaghetti pasta according to package instructions. Drain and rinse under cold water.
  5. Combine: Add the cooked pasta to the tomato mixture and toss until well combined.
  6. Serve: Drizzle the remaining 1 tbsp of olive oil over the salad. Top with optional cheese and balsamic vinegar glaze. Garnish with extra basil.
