Apple Spice Cake:

- 1 1/2 teaspoons ground cinnamon
- 3/4 teaspoon ground nutmeg
- 1 cup vegetable oil
- 1/2 cup packed light brown sugar
- 1 cup granulated sugar
- 3 large eggs at room temperature
- 1 teaspoon vanilla extract
Caramel:
- 1 cup granulated sugar
- 1/4 cup water
- 150 ml heavy cream at room temperature
- 1/2 cup unsalted butter at room temperature
Caramel Swiss Meringue Buttercream:
- 3 large egg whites
- 1 cup granulated sugar
- 1 cup unsalted butter cubed and at room temperature
- 1/2 cup caramel
Instructions
- Prepare Apples: Toss diced apples with brown sugar and cinnamon.
- Make Apple Spice Cake: Combine dry ingredients, mix wet ingredients, then fold together. Stir in prepared apples.
- Prepare Caramel: Cook sugar and water until amber-colored, then stir in cream and butter.
- Make Caramel Swiss Meringue Buttercream: Whip egg whites and sugar, then add butter and caramel.
- Assemble Cake: Layer cake with buttercream, then drizzle with caramel.
Notes
- You can add chopped nuts or raisins to the cake batter for extra texture.
- Make sure to let the caramel cool slightly before drizzling over the cake to prevent it from melting the buttercream.
