Description

Apple Spice Cake:

  • 1 1/2 teaspoons ground cinnamon
  • 3/4 teaspoon ground nutmeg
  • 1 cup vegetable oil
  • 1/2 cup packed light brown sugar
  • 1 cup granulated sugar
  • 3 large eggs at room temperature
  • 1 teaspoon vanilla extract

Caramel:

  • 1 cup granulated sugar
  • 1/4 cup water
  • 150 ml heavy cream at room temperature
  • 1/2 cup unsalted butter at room temperature

Caramel Swiss Meringue Buttercream:

  • 3 large egg whites
  • 1 cup granulated sugar
  • 1 cup unsalted butter cubed and at room temperature
  • 1/2 cup caramel

Instructions

  1. Prepare Apples: Toss diced apples with brown sugar and cinnamon.
  2. Make Apple Spice Cake: Combine dry ingredients, mix wet ingredients, then fold together. Stir in prepared apples.
  3. Prepare Caramel: Cook sugar and water until amber-colored, then stir in cream and butter.
  4. Make Caramel Swiss Meringue Buttercream: Whip egg whites and sugar, then add butter and caramel.
  5. Assemble Cake: Layer cake with buttercream, then drizzle with caramel.

Notes

  • You can add chopped nuts or raisins to the cake batter for extra texture.
  • Make sure to let the caramel cool slightly before drizzling over the cake to prevent it from melting the buttercream.
