Description

Main Ingredients:

  • 4 boneless, skinless chicken thighs
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 1-inch piece ginger, sliced thinly
  • 3 cups chicken broth

Additional Ingredients:

  • 2 green onions, sliced
  • 1 cup jasmine rice
  • 1 3/4 cups water (for rice)
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken: In a bowl, mix soy sauce and brown sugar. Add chicken thighs and coat well. Marinate for 30 minutes.
  2. Caramelize the chicken: Heat vegetable oil in a pan, add chicken thighs and cook until caramelized. Remove and set aside.
  3. Prepare the broth: In the same pan, sauté garlic and ginger. Add chicken broth and bring to a simmer.
  4. Simmer the chicken: Return chicken thighs to the pan. Simmer for 20 minutes.
  5. Cook the rice: In a separate pot, cook jasmine rice with water according to package instructions.
  6. Serve: Serve caramelized soy chicken over rice, garnished with green onions.
