Main Ingredients:
- 4 boneless, skinless chicken thighs
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp vegetable oil
- 4 cloves garlic, minced
- 1-inch piece ginger, sliced thinly
- 3 cups chicken broth
Additional Ingredients:
- 2 green onions, sliced
- 1 cup jasmine rice
- 1 3/4 cups water (for rice)
- Salt and pepper to taste
Instructions
- Marinate the chicken: In a bowl, mix soy sauce and brown sugar. Add chicken thighs and coat well. Marinate for 30 minutes.
- Caramelize the chicken: Heat vegetable oil in a pan, add chicken thighs and cook until caramelized. Remove and set aside.
- Prepare the broth: In the same pan, sauté garlic and ginger. Add chicken broth and bring to a simmer.
- Simmer the chicken: Return chicken thighs to the pan. Simmer for 20 minutes.
- Cook the rice: In a separate pot, cook jasmine rice with water according to package instructions.
- Serve: Serve caramelized soy chicken over rice, garnished with green onions.
