Description

This Cheddar & Mixed Vegetable Loaf is a savory and nutritious dish packed with grated vegetables, cheddar cheese, and fresh herbs, baked to perfection. It’s a great way to sneak in extra veggies into your diet!

Main Ingredients:

  • 1 brown onion, finely diced
  • 1 courgette, grated
  • 1 carrot, grated
  • A big handful of spinach or silverbeet, shredded
  • Small handful of fresh herbs e.g. parsley, chives or basil, finely sliced
  • 1 cup cheddar cheese, grated
  • ½ tsp salt
  • ¼ cup extra virgin olive oil
  • 5 eggs, beaten
  • 1 cup almond meal, self-raising flour or gluten-free self-raising flour

Topping:

  • Sunflower or pumpkin seeds
  • ¼ cup grated cheese

Instructions

  1. Preheat the oven: Preheat the oven to 180°C (355°F) and line a loaf pan with baking paper.
  2. Mix ingredients: In a large bowl, combine all the main ingredients and mix well. Pour the mixture into the prepared loaf pan.
  3. Add topping: Sprinkle sunflower or pumpkin seeds and grated cheese on top of the loaf.
  4. Bake: Bake in the preheated oven for about 45-50 minutes, or until the loaf is golden and cooked through.
  5. Cool and serve: Allow the loaf to cool slightly before slicing and serving. Enjoy!
