Main Ingredients:
- 1 brown onion, finely diced
- 1 courgette, grated
- 1 carrot, grated
- A big handful of spinach or silverbeet, shredded
- Small handful of fresh herbs e.g. parsley, chives or basil, finely sliced
- 1 cup cheddar cheese, grated
- ½ tsp salt
- ¼ cup extra virgin olive oil
- 5 eggs, beaten
- 1 cup almond meal, self-raising flour or gluten-free self-raising flour
Topping:
- Sunflower or pumpkin seeds
- ¼ cup grated cheese
Instructions
- Preheat the oven: Preheat the oven to 180°C (355°F) and line a loaf pan with baking paper.
- Mix ingredients: In a large bowl, combine all the main ingredients and mix well. Pour the mixture into the prepared loaf pan.
- Add topping: Sprinkle sunflower or pumpkin seeds and grated cheese on top of the loaf.
- Bake: Bake in the preheated oven for about 45-50 minutes, or until the loaf is golden and cooked through.
- Cool and serve: Allow the loaf to cool slightly before slicing and serving. Enjoy!
