Description

This Cheesy Chicken and Rice Casserole is a comforting and delicious dish that is easy to make. Tender chicken, creamy rice, and melted cheddar cheese come together in this hearty casserole that the whole family will love.


Ingredients

– 3-4 Boneless Skinless Chicken Breasts

– 1 can (10.75 oz) Cream of Chicken Condensed Soup

– 1 1/3 cup Chicken Broth

– 3/4 cup Minute Rice

– 1/4 Onion, finely diced

– 1 tbsp Minced Garlic

– 12 oz Frozen Peas and Carrots

– 1/4 tsp Pepper

– 1/4 tsp Salt

– 1/2 cup shredded Cheddar Cheese


Instructions

1. Preheat the oven to 375°F and grease a 9×13 inch baking dish.

2. In a large bowl, mix together the cream of chicken soup, chicken broth, rice, onion, garlic, peas, carrots, pepper, and salt.

3. Pour the mixture into the prepared baking dish and place the chicken breasts on top.

4. Cover the dish with foil and bake for 45 minutes.

5. Remove the foil, sprinkle the cheddar cheese over the top, and bake for an additional 15 minutes or until the chicken is cooked through and the cheese is melted.

6. Serve hot and enjoy!


Notes

– You can add diced bell peppers or mushrooms for added flavor.

– For a crispy topping, crush some crackers and sprinkle them over the cheese before baking.
