Cherry Amaretto Tiramisu:

  • 1 pound fresh cherries, pitted and halved
  • 1/4 cup Amaretto liqueur

  • 16 ladyfingers
  • 8 oz mascarpone cheese
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup brewed espresso, cooled
  • Cocoa powder, for dusting
  • Shaved dark chocolate (optional)

Instructions

  1. Prepare the Cherries: In a bowl, toss the cherries with Amaretto and sugar. Set aside.
  2. Make the Mascarpone Cream: In a separate bowl, beat mascarpone, heavy cream, powdered sugar, and vanilla until smooth.
  3. Assemble the Tiramisu: Dip ladyfingers in espresso and layer them in a dish. Spread a layer of mascarpone cream, then add a layer of cherries. Repeat layers.
  4. Chill and Serve: Refrigerate for a few hours to set. Dust with cocoa powder and top with shaved chocolate before serving.

Notes

  • You can adjust the sweetness by adding more or less sugar to the cherry mixture.
  • For a non-alcoholic version, substitute the Amaretto with almond extract.
