Cinnamon Roll Dough:
- 3 2/3 cups bread flour
- 1/3 cup granulated sugar
- 2 teaspoons instant yeast
- 1 teaspoon fine sea salt
- 1/3 cup heavy cream, room temperature
- 1/3 cup whole milk, room temperature
- 1 large egg, room temperature
- 1 teaspoon vanilla bean paste
- Tangzhong from above
- 6 tablespoons unsalted butter, room temperature
Pie Crumble Topping:
- 1/2 cup all-purpose flour
- 2 tablespoons granulated sugar
- 3 tablespoons unsalted butter, melted and cooled slightly
Cream Cheese Frosting:
- 2 ounces cream cheese, room temperature
- 4 tablespoons unsalted butter, room temperature
- 1 cup powdered sugar
- 3 tablespoons heavy cream
- 1 teaspoon vanilla
- 1/2 teaspoon almond extract
Instructions
- Cherry Pie Brown Sugar Filling: Combine cherries, sugar, and lemon juice in a saucepan. Cook until thickened. Set aside.
- Tangzhong: Whisk water and flour in a saucepan, cook until a paste forms. Set aside.
- Cinnamon Roll Dough: Mix dry ingredients, then add wet ingredients and tangzhong. Knead until smooth. Add butter and knead again.
- Pie Crumble Topping: Combine flour, sugar, and butter until crumbly.
- Assembly: Roll out dough, spread brown sugar filling, add cherry filling, cut into strips, roll, and place in a pan. Let rise.
- Bake: Sprinkle pie crumbs on top, bake until golden.
- Cream Cheese Frosting: Mix cream cheese, butter, powdered sugar, cream, and extracts. Frost warm rolls and top with cherry filling.
