Cinnamon Roll Dough:

  • 3 2/3 cups bread flour
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1/3 cup heavy cream, room temperature
  • 1/3 cup whole milk, room temperature
  • 1 large egg, room temperature
  • 1 teaspoon vanilla bean paste
  • Tangzhong from above
  • 6 tablespoons unsalted butter, room temperature

Pie Crumble Topping:

  • 1/2 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 3 tablespoons unsalted butter, melted and cooled slightly

Cream Cheese Frosting:

  • 2 ounces cream cheese, room temperature
  • 4 tablespoons unsalted butter, room temperature
  • 1 cup powdered sugar
  • 3 tablespoons heavy cream
  • 1 teaspoon vanilla
  • 1/2 teaspoon almond extract

Instructions

  1. Cherry Pie Brown Sugar Filling: Combine cherries, sugar, and lemon juice in a saucepan. Cook until thickened. Set aside.
  2. Tangzhong: Whisk water and flour in a saucepan, cook until a paste forms. Set aside.
  3. Cinnamon Roll Dough: Mix dry ingredients, then add wet ingredients and tangzhong. Knead until smooth. Add butter and knead again.
  4. Pie Crumble Topping: Combine flour, sugar, and butter until crumbly.
  5. Assembly: Roll out dough, spread brown sugar filling, add cherry filling, cut into strips, roll, and place in a pan. Let rise.
  6. Bake: Sprinkle pie crumbs on top, bake until golden.
  7. Cream Cheese Frosting: Mix cream cheese, butter, powdered sugar, cream, and extracts. Frost warm rolls and top with cherry filling.
