  • 1.5 lb. chicken thighs, boneless, skinless

  • 1 tbsp butter
  • 1 pint grape tomatoes, halved
  • 4 garlic cloves, minced
  • 5 oz. spinach
  • 1 cup chicken broth, divided
  • 1/2 cup heavy cream
  • 2 tbsp all-purpose flour
  • 3/4 cup parmesan cheese, freshly grated

Instructions

  1. Cook the gnocchi: Cook gnocchi according to package instructions and set aside.
  2. Sear the chicken: Season and sear chicken in a skillet, then set aside.
  3. Prepare the sauce: Saute onion, tomatoes, garlic, and spinach. Make a creamy sauce with broth, cream, flour, and parmesan cheese.
  4. Combine everything: Add gnocchi to the sauce, place chicken back in the skillet, and simmer.
