- 1 tbsp olive oil
- 1.5 lb. chicken thighs, boneless, skinless
- 1 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/2 cup onion, diced
- 1 tbsp butter
- 1 pint grape tomatoes, halved
- 4 garlic cloves, minced
- 5 oz. spinach
- 1 cup chicken broth, divided
- 1/2 cup heavy cream
- 2 tbsp all-purpose flour
- 3/4 cup parmesan cheese, freshly grated
Instructions
- Cook the gnocchi: Cook gnocchi according to package instructions and set aside.
- Sear the chicken: Season and sear chicken in a skillet, then set aside.
- Prepare the sauce: Saute onion, tomatoes, garlic, and spinach. Make a creamy sauce with broth, cream, flour, and parmesan cheese.
