Description

This flavorful Chicken Jambalaya recipe combines tender chicken, spicy Andouille sausage, and a mix of vegetables in a Cajun-seasoned tomato broth, all served over fluffy white rice.

Main Ingredients:

  • pounds boneless skinless chicken breast (cut into bite-size pieces)
  • 2 tablespoons Cajun seasoning (divided)
  • 3 tablespoons olive oil (divided)
  • 1 pound Andouille sausage (sliced into rounds)
  • ½ onion (diced)
  • 2 ribs celery (diced)
  • 2 bell peppers (any color)
  • 2 cloves garlic (minced)
  • 14.5 ounces crushed tomatoes (1 can)
  • 1 teaspoon dried oregano
  • 2 cups chicken broth
  • 1 cup white rice

Instructions

  1. Season Chicken: Toss chicken pieces with 1 tablespoon Cajun seasoning.
  2. Sear Chicken: In a large pot, heat 2 tablespoons olive oil and brown chicken. Remove and set aside.
  3. Cook Sausage: Add Andouille sausage slices to the pot and cook until browned. Remove and set aside with chicken.
  4. Sauté Veggies: In the same pot, sauté onions, celery, bell peppers, and garlic until softened.
  5. Add Tomatoes & Seasonings: Stir in crushed tomatoes, oregano, remaining Cajun seasoning, and chicken broth. Bring to a simmer.
  6. Cook Rice: Add rice, cover, and simmer until rice is cooked through.
  7. Combine Ingredients: Return chicken and sausage to the pot, mix well, and let flavors meld together.
  8. Serve: Serve hot, garnished with fresh herbs if desired.
