A classic Italian dish featuring tender chicken breasts cooked in a savory Marsala wine sauce with mushrooms and fresh herbs.
Ingredients
– 2 medium boneless skinless chicken breasts
– 1 teaspoon kosher salt, divided
– 1/4 teaspoon ground black pepper
– 1/4 cup all-purpose flour
– 2 tablespoons extra-virgin olive oil, divided
– 3 tablespoons softened unsalted butter, divided
– 1 medium shallot, finely chopped
– 3 cloves garlic, minced
– 8 ounces sliced cremini, shiitake, or mixed wild mushrooms
– 1/2 cup dry Marsala wine
– 1 tablespoon sherry vinegar or red wine vinegar
– 1/2 cup chicken broth
– 2 teaspoons chopped fresh thyme or 2 tablespoons chopped fresh parsley
Instructions
1. Pound chicken breasts to an even thickness, season with salt and pepper, then dredge in flour.
2. Heat olive oil and 1 tablespoon butter in a skillet, cook chicken until golden brown, then set aside.
3. In the same skillet, sauté shallot, garlic, and mushrooms.
4. Deglaze with Marsala wine, vinegar, and broth, then simmer.
5. Return chicken to the pan, cook until done, then stir in remaining butter and herbs.
Notes
– For a richer sauce, use up to 16 ounces of mushrooms.
– Serve over pasta, rice, or mashed potatoes for a complete meal.
