Description

  • 3 boneless skinless chicken breasts, cut in half horizontally to make 6 breast halves
  • 1/2 cup freshly grated parmesan cheese, divided
  • 2 eggs
  • 1 cup panko bread crumbs
  • 1 cup Italian style bread crumbs, or panko
  • 1 teaspoon garlic powder
  • 3 Tablespoons oil
  • 24 ounces marinara sauce, or HOMEMADE
  • 1 cup shredded mozzarella cheese
  • fresh basil leaves, for serving

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Coat the chicken: In a shallow dish, mix 1/4 cup parmesan cheese with breadcrumbs and garlic powder. In another dish, beat the eggs. Dip each chicken breast in the eggs, then coat with the breadcrumb mixture.
  3. Cook the chicken: Heat oil in a skillet over medium-high heat. Cook the chicken until golden brown on each side. Transfer to the prepared baking sheet.
  4. Top with sauce and cheese: Spoon marinara sauce over each chicken breast and sprinkle with remaining parmesan cheese and mozzarella.
  5. Bake: Bake for about 20 minutes or until chicken is cooked through and cheese is melted and bubbly.
  6. Serve: Garnish with fresh basil leaves before serving.
