  • 1 (13.5-ounce) can full-fat coconut milk
  • 2 garlic cloves, grated
  • 1 teaspoon grated fresh ginger
  • 3 cups cooked chickpeas, drained and rinsed
  • 1/4 cup water, plus more as needed
  • 1 tablespoon fresh lime juice
  • 4 cups fresh spinach
  • Chopped fresh cilantro, for garnish

For serving:

  • Naan bread

Instructions

  1. Cook the onion: Heat coconut oil, add onion, and cook until softened.
  2. Add spices: Stir in cumin seeds, curry powder, garam masala, and salt until fragrant.
  3. Combine ingredients: Add tomatoes, coconut milk, garlic, ginger, and chickpeas. Simmer until thickened.
