Meat and Marinade:
- 1 lb flank steak, skirt steak, or other cut
- 1 tablespoon soy sauce

- 1 tablespoon cornstarch

Sauce:
- 1/2 cup chicken stock (or beef stock)
- 2 tablespoons Shaoxing wine (or dry sherry)
- 2 tablespoons soy sauce
- 1 teaspoon dark soy sauce
- 2 teaspoons brown sugar (or white sugar)
Stir-fry:
- 1 head broccoli, cut to bite-size florets
- 1 tablespoon peanut oil (or vegetable oil)
- 3 garlic cloves, minced
- 2 teaspoons ginger, minced
Instructions
- Marinate the beef: Combine beef with soy sauce, oil, cornstarch, and baking soda. Let marinate for at least 30 minutes.
- Prepare the sauce: Mix chicken stock, Shaoxing wine, soy sauce, dark soy sauce, and sugar in a bowl.
- Stir-fry: Heat oil in a pan, add garlic and ginger. Add marinated beef and stir-fry until cooked. Add broccoli and sauce, cook until broccoli is tender.
Notes
- If using baking soda in the marinade, do not exceed the recommended amount as it can affect the texture of the meat.
- You can adjust the sweetness of the sauce by adding more or less sugar to suit your taste.
