- 3/4 cup (150 grams) granulated sugar
- 1 large egg, at cool room temperature
- 1 teaspoon peppermint extract
- 1/2 teaspoon vanilla extract
- 1 tablespoon milk
Other
- ¼–½ teaspoon green gel food coloring (preferably Americolor Forest Green or Leaf Green)

- Color and Roll: Divide the dough in half. Add green food coloring to one half and leave the other plain. Roll out each piece into a rectangle, then stack them on top of each other. Roll up the dough tightly to form a log.
- Chill and Slice: Wrap the log in plastic wrap and chill for at least 2 hours. Preheat the oven, then slice the log into cookies. Place on a baking sheet and bake until set.
