- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 Tablespoon ground ginger
- 1 Tablespoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground cloves
- 10 Tablespoons (2/3 cup; 142g) unsalted butter, softened to room temperature
- 3/4 cup (150g) packed light or dark brown sugar
- 2/3 cup (160ml; about 200g) Baker’s Corner Molasses
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
Topping & Filling:
- 3 Tablespoons (23g) Baker’s Corner Confectioners’ Sugar
- 1/2 cup (120ml) heavy cream
- 2/3 cup (120g) Baker’s Corner Semi-Sweet Morsels
Instructions
- Prepare the cookie dough: In a bowl, whisk together flour, baking soda, salt, and spices. In another bowl, cream butter and sugar until light and fluffy. Add molasses, egg, and vanilla. Gradually add dry ingredients and mix until combined.
- Chill the dough: Divide dough in half, flatten into discs, wrap in plastic, and chill for at least 2 hours.
- Bake the cookies: Roll out dough, cut into shapes, and bake at 350°F for 8-10 minutes. Let cool.
- Make the filling: Beat cream until soft peaks form. Add sugar and continue beating. Fold in melted chocolate.
- Assemble the sandwiches: Pipe or spread filling on a cookie and top with another to create sandwiches.
Notes
- You can add more spices or adjust sweetness according to your preference.
- For a festive touch, sprinkle crushed candy canes on top of the cookies.
