Description

  • 2 cups + 2 tablespoons all-purpose flour (270g)
  • 2 tablespoons powdered milk (12g)
  • 1 teaspoon salt
  • ½ teaspoon baking soda

Butter & Sugars

  • 14 tablespoons unsalted butter (196g), sliced into tablespoons and divided
  • ½ cup granulated sugar (100g)
  • ¾ cup light brown sugar (150g), packed
  • 1 tablespoon light corn syrup

Wet Ingredients

  • 2 teaspoons vanilla extract
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature

Mix-ins & Toppings

  • 10 Saltine crackers, crushed
  • 1 cup bits o brickle toffee bits, plus more for topping
  • ½ cup pecan pieces (optional topping)
  • 12 ounces chocolate chips
  • Holiday sprinkles

Instructions

  1. Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together dry ingredients. In a separate bowl, cream together butter, sugars, and corn syrup until light and fluffy.
  3. Beat in vanilla, egg, and egg yolk. Gradually mix in dry ingredients until just combined. Fold in crackers, toffee bits, and pecans.
  4. Drop dough by spoonfuls onto prepared baking sheets. Bake for 10-12 minutes or until edges are golden.
  5. Remove from oven and immediately press a few chocolate chips on top. Sprinkle with more toffee bits and holiday sprinkles. Cool on wire racks before serving.

Notes

  • You can customize the toppings with different types of nuts or candies.
  • For a more decadent version, drizzle melted chocolate on top of the cookies.
