Gingerbread Cookie Base
- 1 ½ cups all-purpose flour
- ½ tsp baking soda
- 1 tsp ground ginger
- ½ tsp ground cinnamon
- ¼ tsp ground cloves
- ¼ tsp salt
- 6 tbsp unsalted butter, softened
- ¼ cup brown sugar
- ¼ cup molasses
- 1 egg yolk
Coffee-Gingerbread Mousse
- 1 tsp powdered gelatin
- 2 tbsp cold water
- 1 cup heavy cream (chilled)
- ¼ cup mascarpone (optional)
- ¼ cup strong brewed espresso or coffee (cooled)
- ⅓ cup white chocolate, melted
- 2 tbsp brown sugar
- ½ tsp cinnamon
- ¼ tsp ground ginger
- Pinch of nutmeg
- ½ tsp vanilla extract
Mirror Glaze

- 1 ½ tsp powdered gelatin
- 2 tbsp cold water
- ⅓ cup sweetened condensed milk
- ½ cup sugar
- ¼ cup water
- ⅓ cup white chocolate, chopped
- A few drops of brown gel food coloring (optional)

- Cocoa powder for dusting
- Edible glitter or gold leaf
Instructions
- Prepare Gingerbread Cookie Base: Mix dry ingredients, cream butter with sugar, add molasses and egg yolk, combine all, roll out, and chill.
- Make Coffee-Gingerbread Mousse: Bloom gelatin, whip cream, combine all mousse ingredients, fold gently, and chill.
- Create Mirror Glaze: Bloom gelatin, heat milk, sugar, water, pour over chocolate, blend, add gelatin, and color if desired.
- Assemble Mousse Domes: Fill dome molds with mousse, freeze, unmold, glaze, decorate, and serve.

- You can customize the spice level of the mousse by adjusting the amounts of ginger and cinnamon.
