Gingerbread Cookie Base

  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • 1 tsp ground ginger
  • ½ tsp ground cinnamon

  • 6 tbsp unsalted butter, softened
  • ¼ cup brown sugar
  • ¼ cup molasses
  • 1 egg yolk

Coffee-Gingerbread Mousse

  • 1 tsp powdered gelatin
  • 2 tbsp cold water
  • 1 cup heavy cream (chilled)
  • ¼ cup mascarpone (optional)
  • ¼ cup strong brewed espresso or coffee (cooled)
  • ⅓ cup white chocolate, melted
  • 2 tbsp brown sugar
  • ½ tsp cinnamon
  • ¼ tsp ground ginger
  • Pinch of nutmeg
  • ½ tsp vanilla extract

Mirror Glaze

    • 1 ½ tsp powdered gelatin
    • 2 tbsp cold water
    • ⅓ cup sweetened condensed milk
    • ½ cup sugar
    • ¼ cup water
    • ⅓ cup white chocolate, chopped
    • A few drops of brown gel food coloring (optional)

Optional Decoration

    • Mini gingerbread cookies
    • Cocoa powder for dusting
    • Edible glitter or gold leaf

Instructions

  1. Prepare Gingerbread Cookie Base: Mix dry ingredients, cream butter with sugar, add molasses and egg yolk, combine all, roll out, and chill.
  2. Make Coffee-Gingerbread Mousse: Bloom gelatin, whip cream, combine all mousse ingredients, fold gently, and chill.
  3. Create Mirror Glaze: Bloom gelatin, heat milk, sugar, water, pour over chocolate, blend, add gelatin, and color if desired.
  4. Assemble Mousse Domes: Fill dome molds with mousse, freeze, unmold, glaze, decorate, and serve.
