For the Filling:
- 1 lb lean ground beef
- 1 lb ground sausage
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 small yellow onion, chopped
- 2 ribs celery, chopped
- 1–2 carrots, chopped
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 2 1/2 cups low-sodium beef broth
- 2 tablespoons tomato paste
- 1 cube beef bouillon
- 2 tablespoons Worcestershire sauce
- 1 teaspoon fresh thyme, chopped
- 1 teaspoon fresh rosemary, chopped
- 2 bay leaves
- 1/2 cup frozen corn
- 1/2 cup frozen peas
For the mashed potatoes:
- 2 1/2 pounds Russet potatoes
- 1/4 cup sour cream
- 1/2 cup milk
- 4 tablespoons butter
- salt and pepper, to taste
- 1/2 cup freshly grated parmesan cheese
- 1/2 cup shredded cheddar cheese
Instructions
- Prepare the Filling: Brown the ground beef and sausage, then add in the vegetables, garlic, and seasonings. Cook until vegetables are tender. Stir in flour, followed by broth, tomato paste, and Worcestershire sauce. Simmer until thickened. Add in corn and peas.
- Make the Mashed Potatoes: Boil and mash potatoes with sour cream, milk, and butter. Season with salt and pepper. Stir in parmesan cheese.
- Assemble the Pie: Spread the filling in a baking dish, top with mashed potatoes, and sprinkle with cheddar cheese.
- Bake: Bake in a preheated oven until the top is golden and bubbly.
Notes
- You can customize the filling by adding your favorite vegetables or herbs.
- For a healthier version, use lean turkey or chicken instead of beef.
