  • 1 1/2 pounds boneless steak such as ribeye filet, sirloin
  • Neutral oil as needed

  • 3 sweet onions, thinly sliced
  • 9 slider buns
  • 3/4 pound sliced havarti cheese

FOR THE COWBOY BUTTER:

  • 1 stick unsalted butter, at room temperature
  • 4 garlic cloves, minced
  • 1/2 lemon, zested and juiced
  • 1 tablespoon dijon mustard
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne
  • 1/2 teaspoon dried thyme
  • 1 teaspoon red pepper flakes
  • 1 tablespoon chives, minced
  • 2 tablespoons fresh parsley, minced
  • Kosher salt and pepper to taste

Instructions

  1. Prepare the cowboy butter: In a bowl, mix together butter, garlic, lemon zest, lemon juice, dijon mustard, paprika, cayenne, thyme, red pepper flakes, chives, parsley, salt, and pepper until well combined. Set aside.
  2. Cook the steak: Season the steak with salt and pepper. Cook to your desired doneness in a skillet with oil. Let it rest before slicing thinly.
  3. Caramelize the onions: In the same skillet, cook the onions until caramelized.
  4. Assemble the sliders: Spread cowboy butter on slider buns, add sliced steak, caramelized onions, and havarti cheese. Broil until cheese is melted. Serve hot and enjoy!
