Description

These Cozy Christmas Gingerbread Cookies are the perfect holiday treat with a blend of warm spices and molasses. They are soft, chewy, and full of festive flavor.

Dry Ingredients:

  • 3 and 1/2 cups (440g) all-purpose flour (spooned & leveled)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 Tablespoon ground ginger
  • 1 Tablespoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cloves

Wet Ingredients:

  • 10 Tablespoons (142g) unsalted butter, softened
  • 3/4 cup (150g) packed light or dark brown sugar
  • 2/3 cup (160ml; about 200g) unsulphured or dark molasses
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. Whisk together the dry ingredients in a medium bowl.
  3. Cream the butter and sugar together until light and fluffy, then add molasses, egg, and vanilla.
  4. Gradually add the dry ingredients to the wet mixture until combined.
  5. Chill the dough, then roll out and cut into shapes.
  6. Bake for 8-10 minutes, then cool on a wire rack.

Notes

  • You can decorate these cookies with icing or enjoy them plain.
  • For a spicier kick, increase the amount of ground ginger or cinnamon.
