Dry Ingredients:
- 3 and 1/2 cups (440g) all-purpose flour (spooned & leveled)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 Tablespoon ground ginger
- 1 Tablespoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground cloves
Wet Ingredients:
- 10 Tablespoons (142g) unsalted butter, softened
- 3/4 cup (150g) packed light or dark brown sugar
- 2/3 cup (160ml; about 200g) unsulphured or dark molasses
- 1 large egg, at room temperature
- 1 teaspoon pure vanilla extract
Instructions
- Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
- Whisk together the dry ingredients in a medium bowl.
- Cream the butter and sugar together until light and fluffy, then add molasses, egg, and vanilla.
- Gradually add the dry ingredients to the wet mixture until combined.
- Chill the dough, then roll out and cut into shapes.
- Bake for 8-10 minutes, then cool on a wire rack.
Notes
- You can decorate these cookies with icing or enjoy them plain.
- For a spicier kick, increase the amount of ground ginger or cinnamon.
