Ingredients

- 4 cloves garlic, minced
- 2 tbsp EVOO
- 2–3 leeks, light green part only, cut into strips
- 2, 8 ounce packages of mushrooms (or 3–4 large portobello mushroom caps), diced
- 1 box of bow tie pasta (16 ounces)
- ¾ cup half & half
- ¼ cup parmesan cheese, grated is best
- 1 lemon, juiced
- Garnish: Fresh cracked black pepper
Instructions
- Sauté the garlic: Heat EVOO in a large skillet over medium heat. Add minced garlic and sauté until fragrant.
- Add leeks and mushrooms: Add leeks and mushrooms to the skillet and cook until softened.
- Cook the pasta: Cook the bow tie pasta according to package instructions.
- Mix everything together: Add half & half, parmesan cheese, and lemon juice to the skillet. Stir until well combined.
- Combine with pasta: Drain the pasta and add it to the skillet with the sauce. Toss everything together.
- Serve: Garnish with fresh cracked black pepper before serving.
Notes
- You can add cooked chicken or shrimp for extra protein.
- Feel free to add more vegetables like spinach or peas for added nutrition.
