  • 34 boneless skinless chicken breasts, cooked and diced

  • 2 teaspoons minced garlic
  • 1/2 cup shredded carrots
  • 1 tablespoon olive oil
  • 4 cups low sodium chicken broth
  • Salt and pepper, to taste
  • 1 teaspoon thyme
  • 16 ounces potato gnocchi
  • 2 cups half and half
  • 1 cup fresh spinach, roughly chopped

Instructions

  1. Saute Aromatics: In a large pot, heat olive oil over medium heat. Add celery, onion, garlic, and carrots. Cook until vegetables are softened.
  2. Add Chicken and Broth: Stir in cooked chicken, chicken broth, salt, pepper, and thyme. Bring to a simmer.
  3. Add Gnocchi and Half and Half: Add gnocchi to the pot and cook until they float to the surface. Stir in half and half and spinach. Simmer until heated through.
