  • 1 cup Pecorino Romano, grated
  • 1 cup heavy cream
  • 2 cups pasta water (may not need all)
  • 1/2 cup minced flat-leaf Italian parsley

Instructions

  1. Boil water: Bring a pot of salted water to boil.
  2. Sauté garlic and mushrooms: Heat olive oil in a pan, sauté garlic until golden, then add mushrooms and cook until browned. Season with salt and pepper.
  3. Cook pasta: Cook pasta until 1 minute less than al dente, reserving pasta water.
  4. Make sauce: Add cream and Pecorino to the pan, simmer. Add pasta and pasta water, mix well. Stir in parsley.
