- 10 cloves garlic, sliced or chopped
- 1 pound mushrooms, sliced
- Salt and pepper, to taste
- 1 cup Pecorino Romano, grated
- 1 cup heavy cream
- 2 cups pasta water (may not need all)
- 1/2 cup minced flat-leaf Italian parsley
Instructions
- Boil water: Bring a pot of salted water to boil.
- Sauté garlic and mushrooms: Heat olive oil in a pan, sauté garlic until golden, then add mushrooms and cook until browned. Season with salt and pepper.
- Cook pasta: Cook pasta until 1 minute less than al dente, reserving pasta water.
- Make sauce: Add cream and Pecorino to the pan, simmer. Add pasta and pasta water, mix well. Stir in parsley.
- Finish and serve: Adjust seasoning, use more pasta water if needed to thin out the sauce. Enjoy!
