Description

  • 2 tablespoons olive oil

For the Sauce:

  • 2 tablespoons butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 1 teaspoon cornstarch (mixed with 1 tablespoon water to thicken, if needed)

For the Rice:

  • 1 1/2 cups long-grain white rice
  • 3 cups water or chicken broth

Instructions

  1. Season the chicken: In a bowl, mix salt, black pepper, garlic powder, onion powder, and paprika. Rub the mixture over the chicken.
  2. Sear the chicken: Heat olive oil in a skillet and sear the chicken until browned on both sides. Remove and set aside.
  3. Make the sauce: In the same skillet, melt butter and sauté onion and garlic. Add chicken broth, heavy cream, thyme, parsley, salt, and pepper. Simmer until thickened.
  4. Cook the rice: In a separate pot, bring water or chicken broth to a boil. Add rice, reduce heat, cover, and simmer until cooked.
  5. Combine and serve: Add the chicken back to the sauce and simmer until cooked through. Serve over rice.
