Description

This Creamy Street Corn Pasta Salad combines the flavors of street corn with creamy pasta salad for a delicious and satisfying dish.


Ingredients

Dressing:

  • 4 ounces cream cheese
  • 1/3 cup sour cream
  • 2 tbsp extra virgin olive oil
  • 12 garlic cloves, grated
  • 1 tbsp fresh chives, chopped
  • Salt and pepper to taste
  • 3/4 cup crumbled cotija or feta cheese

Salad:

  • 1 pound short pasta
  • 1 head romaine lettuce, shredded
  • 2 cups grilled or roasted corn
  • 1/2 cup fresh basil, torn
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup spicy cheddar cheese, diced
  • 1 avocado, diced

Chili Butter:

  • 4 tbsp salted butter
  • 2 tsp smoked paprika
  • 2 tbsp chili powder
  • 1/2 to 2 tsp cayenne pepper

Instructions

  1. Prepare Dressing: In a bowl, mix cream cheese, sour cream, olive oil, garlic, chives, salt, pepper, and cotija/feta cheese. Set aside.
  2. Cook Pasta: Cook pasta according to package instructions, then drain and cool.
  3. Make Chili Butter: Melt butter in a pan, add paprika, chili powder, and cayenne. Set aside.
  4. Assemble Salad: In a large bowl, combine pasta, lettuce, corn, basil, cilantro, cheddar, and avocado. Toss with dressing and chili butter.

Notes

  • If you prefer a spicier salad, increase the amount of cayenne in the chili butter.
  • This salad can be made ahead of time and refrigerated until serving.
