This Creamy Street Corn Pasta Salad combines the flavors of street corn with creamy pasta salad for a delicious and satisfying dish.

Dressing:
- 4 ounces cream cheese
- 1/3 cup sour cream
- 2 tbsp extra virgin olive oil
- 1–2 garlic cloves, grated
- 1 tbsp fresh chives, chopped
- Salt and pepper to taste
- 3/4 cup crumbled cotija or feta cheese
Salad:
- 1 pound short pasta
- 1 head romaine lettuce, shredded
- 2 cups grilled or roasted corn
- 1/2 cup fresh basil, torn
- 1/2 cup fresh cilantro, chopped
- 1/2 cup spicy cheddar cheese, diced
- 1 avocado, diced
Chili Butter:
- 4 tbsp salted butter
- 2 tsp smoked paprika
- 2 tbsp chili powder
- 1/2 to 2 tsp cayenne pepper
Instructions
- Prepare Dressing: In a bowl, mix cream cheese, sour cream, olive oil, garlic, chives, salt, pepper, and cotija/feta cheese. Set aside.
- Cook Pasta: Cook pasta according to package instructions, then drain and cool.
- Make Chili Butter: Melt butter in a pan, add paprika, chili powder, and cayenne. Set aside.
- Assemble Salad: In a large bowl, combine pasta, lettuce, corn, basil, cilantro, cheddar, and avocado. Toss with dressing and chili butter.
Notes
- If you prefer a spicier salad, increase the amount of cayenne in the chili butter.
- This salad can be made ahead of time and refrigerated until serving.
