- 1 dry pint cherry or grape tomatoes
- 2 cups baby spinach
- 3 Tablespoons unsalted butter
- ¼ cup grated parmesan cheese
- ¼ cup half-and-half
- 3 Tablespoons olive oil
- ¾ cup white wine or vegetable stock
- 16 ounces gnocchi
- Salt and pepper, to taste
Instructions
- Sauté Vegetables: In a skillet, sauté leek, onion, and garlic until softened. Add tomatoes and spinach.
- Make Sauce: Stir in butter, parmesan, half-and-half, and wine or stock. Simmer until thickened.
