Meat Filling:

- 500g (17.5oz) extra lean beef mince
- 1 onion, finely chopped
- 2 cloves of garlic, crushed
- 2 carrots, chopped
- 2 sticks of celery, chopped
- 3/4 cup (120g) frozen peas
- 2 tablespoons tomato paste
- 2 cups (480ml) beef or vegetable stock
- 1 heaped teaspoon of marmite (optional)
- 1 teaspoon of thyme
- Dash of balsamic vinegar
Potato Topping:
- 1kg (2.25lb) potatoes, peeled and sliced thinly
- Low calorie spray
Instructions
- Prepare the Meat Filling: In a large pan, cook the beef mince, onion, and garlic until browned. Add carrots, celery, peas, tomato paste, stock, marmite, thyme, and vinegar. Simmer for 20 mins.
- Layer the Dish: Transfer the meat filling to a baking dish. Top with thinly sliced potatoes, spray with low-calorie spray.
- Bake: Bake in a preheated oven at 180°C (350°F) for 40-45 mins until potatoes are crispy and golden.
Notes
- You can add cheese on top of the potato layer for a cheesy twist.
- Feel free to customize the vegetables in the filling based on your preferences.
