Description

This delicious Crispy Potato Topped Meat Pie is a comforting dish with layers of minced beef, vegetables, and a crispy potato topping. Perfect for a cozy dinner with the family.

Meat Filling:

    • 500g (17.5oz) extra lean beef mince
    • 1 onion, finely chopped
    • 2 cloves of garlic, crushed
    • 2 carrots, chopped
    • 2 sticks of celery, chopped
    • 3/4 cup (120g) frozen peas
    • 2 tablespoons tomato paste
    • 2 cups (480ml) beef or vegetable stock
    • 1 heaped teaspoon of marmite (optional)
    • 1 teaspoon of thyme
    • Dash of balsamic vinegar

Potato Topping:

  • 1kg (2.25lb) potatoes, peeled and sliced thinly
  • Low calorie spray

Instructions

  1. Prepare the Meat Filling: In a large pan, cook the beef mince, onion, and garlic until browned. Add carrots, celery, peas, tomato paste, stock, marmite, thyme, and vinegar. Simmer for 20 mins.
  2. Layer the Dish: Transfer the meat filling to a baking dish. Top with thinly sliced potatoes, spray with low-calorie spray.
  3. Bake: Bake in a preheated oven at 180°C (350°F) for 40-45 mins until potatoes are crispy and golden.

Notes

  • You can add cheese on top of the potato layer for a cheesy twist.
  • Feel free to customize the vegetables in the filling based on your preferences.
