Ingredients

Scale

  • 2 cups shredded cooked chicken (rotisserie chicken works great)
  • 1 cup cream cheese, softened
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup salsa (choose your preferred heat level)
  • 1 teaspoon taco seasoning
  • 1 tablespoon fresh lime juice
  • 1/4 cup chopped fresh cilantro (optional)
  • 1012 small flour tortillas
  • Cooking spray or olive oil
  • Salt and pepper to taste
  • Optional toppings: guacamole, sour cream, additional salsa, diced tomatoes, or sliced jalapeños

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare Filling: In a mixing bowl, combine shredded chicken, cream cheese, shredded cheese, salsa, taco seasoning, lime juice, and cilantro. Mix well.
  3. Assemble Taquitos: Place a spoonful of the filling onto each tortilla, roll them up tightly, and place them seam side down on the prepared baking sheet.
  4. Bake: Lightly spray or brush the taquitos with cooking spray or olive oil. Bake for 15-20 minutes or until golden and crispy.
  5. Serve: Serve hot with your favorite toppings.

Notes

  • You can customize the filling with additional ingredients like diced peppers, onions, or black beans.
  • If you prefer a crunchier texture, you can fry the taquitos in oil instead of baking them.
