- 3 large egg yolks
For Garnish:

Instructions
- Preheat Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cook Potatoes: Peel and dice the potatoes, then boil in salted water until tender. Drain and mash with butter, cream, Parmesan, salt, and pepper.
- Add Egg Yolks: Beat in the egg yolks until well combined.
- Pipe Potatoes: Transfer the mixture to a piping bag and pipe onto the baking sheet in desired shapes.
- Bake: Bake for 15-20 minutes until golden brown.
- Garnish and Serve: Sprinkle with chives or parsley and sea salt before serving.
