Description

    • 2 pounds Russet or Yukon gold potatoes

    • 1⁄4 cup heavy cream
    • 1⁄4 cup grated Parmesan cheese

    • 1⁄2 teaspoon black pepper
    • 3 large egg yolks

For Garnish:

  • 1 tablespoon sea salt

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cook Potatoes: Peel and dice the potatoes, then boil in salted water until tender. Drain and mash with butter, cream, Parmesan, salt, and pepper.
  3. Add Egg Yolks: Beat in the egg yolks until well combined.
  4. Pipe Potatoes: Transfer the mixture to a piping bag and pipe onto the baking sheet in desired shapes.
  5. Bake: Bake for 15-20 minutes until golden brown.
