This Dumpling Bake recipe features a flavorful red curry broth paired with your choice of dumplings, bok choy, and zucchini, baked to perfection. Top it off with garnishes like sesame seeds and green onions for a delicious meal.

Red Curry Broth:

  • 1 can (13.5 fl oz / 400ml) coconut milk
  • 23 tablespoons red curry paste
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or sugar
  • 1 teaspoon sesame oil
  • 1 large garlic clove
  • 1 small cube of ginger

Dumpling Bake:

  • 1620 dumplings of choice
  • 2 bok choy bulbs
  • 1 zucchini or any vegetable of choice
  • Garnish ideas – sesame seeds, sliced green onions, cilantro/coriander, chilli crisp oil
  • Serve with white jasmine rice or noodles

Instructions

  1. Prepare Red Curry Broth: Mix coconut milk, red curry paste, soy sauce, rice vinegar, honey, sesame oil, garlic, and ginger in a pot. Simmer for 5-10 mins.
  2. Assemble Dumpling Bake: Place dumplings, bok choy, and zucchini in a baking dish. Pour the red curry broth over them.
  3. Bake: Bake at 375°F (190°C) for 25-30 mins or until dumplings are cooked through.
  4. Serve: Garnish with suggested toppings and enjoy with rice or noodles.

  • You can use any type of dumplings you prefer, such as meat-filled or vegetarian options.
  • Adjust the spiciness of the red curry broth by adding more or less red curry paste.
