Red Curry Broth:
- 1 can (13.5 fl oz / 400ml) coconut milk
- 2–3 tablespoons red curry paste
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or sugar
- 1 teaspoon sesame oil
- 1 large garlic clove
- 1 small cube of ginger
Dumpling Bake:
- 16–20 dumplings of choice
- 2 bok choy bulbs
- 1 zucchini or any vegetable of choice
- Garnish ideas – sesame seeds, sliced green onions, cilantro/coriander, chilli crisp oil
- Serve with white jasmine rice or noodles
Instructions
- Prepare Red Curry Broth: Mix coconut milk, red curry paste, soy sauce, rice vinegar, honey, sesame oil, garlic, and ginger in a pot. Simmer for 5-10 mins.
- Assemble Dumpling Bake: Place dumplings, bok choy, and zucchini in a baking dish. Pour the red curry broth over them.
- Bake: Bake at 375°F (190°C) for 25-30 mins or until dumplings are cooked through.
- Serve: Garnish with suggested toppings and enjoy with rice or noodles.
Notes
- You can use any type of dumplings you prefer, such as meat-filled or vegetarian options.
- Adjust the spiciness of the red curry broth by adding more or less red curry paste.
