    • 8 ounces shiitake mushrooms, stemmed and sliced

    • 6 cups vegetable broth

    • 1 tablespoon grated fresh ginger
    • 1 medium carrot, julienned
    • 1 pound frozen vegetable dumplings, mini wontons or potstickers
    • 4 scallions, thinly sliced
    • 3 cups fresh spinach

Additional Ingredients:

  • 1 tablespoon rice vinegar
  • 1 tablespoon fresh lime juice
  • Sesame seeds, for garnish
  • Sichuan chili crisp, optional, for serving

Instructions

  1. Sauté Mushrooms: Heat oil in a large pot over medium heat. Add mushrooms and sauté until browned, about 5 minutes.
  2. Add Ingredients: Stir in tamari, vegetable broth, garlic, ginger, carrot, and dumplings. Bring to a boil, then reduce heat and simmer for 10 minutes.
  3. Finish Soup: Stir in scallions, spinach, rice vinegar, and lime juice. Cook until spinach wilts, about 2 minutes. Serve hot garnished with sesame seeds and chili crisp if desired.
