- 1 medium carrot, julienned
- 1 pound frozen vegetable dumplings, mini wontons or potstickers
- 4 scallions, thinly sliced
- 3 cups fresh spinach
Additional Ingredients:
- 1 tablespoon rice vinegar
- 1 tablespoon fresh lime juice
- Sesame seeds, for garnish
- Sichuan chili crisp, optional, for serving
Instructions
- Sauté Mushrooms: Heat oil in a large pot over medium heat. Add mushrooms and sauté until browned, about 5 minutes.
- Add Ingredients: Stir in tamari, vegetable broth, garlic, ginger, carrot, and dumplings. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Finish Soup: Stir in scallions, spinach, rice vinegar, and lime juice. Cook until spinach wilts, about 2 minutes. Serve hot garnished with sesame seeds and chili crisp if desired.
