Chicken:
- 500 gram or 1.1 lbs skinless chicken breast cut into bite size cubes
- 2 tablespoon peanut oil
- Salt as required
Vegetables:
- 2 medium size onion cut into 1 inch cubes
- 1 large size green bell pepper cut into 1 inch cubes
- 1/2 teaspoon minced garlic
- 1/2 teaspoon minced ginger
- 1 fresh red/green chili chopped
Sauce:
- 3/4 teaspoon black pepper freshly ground
- 3 tablespoon light soy sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon rice vinegar
- 1/2 teaspoon brown sugar
- 1 teaspoon toasted sesame oil
- 1 teaspoon cornstarch
- 2 tablespoon water/chicken broth
Instructions
- Marinate the chicken: In a bowl, mix chicken cubes with salt, cornstarch, and black pepper. Set aside for 15-20 minutes.
- Prepare the sauce: In a separate bowl, combine black pepper, light soy sauce, dark soy sauce, rice vinegar, brown sugar, sesame oil, cornstarch, and water/chicken broth.
- Cook the chicken: Heat oil in a pan, add marinated chicken and cook until golden brown. Remove from pan.
- Stir-fry vegetables: In the same pan, sauté onions, bell peppers, garlic, ginger, and chili until slightly tender.
- Combine everything: Add cooked chicken back to the pan, pour the sauce over, and stir well. Cook until the sauce thickens.
- Serve: Garnish with green onions and serve hot with rice or noodles.
