Ingredients

Chicken:

  • 500 gram or 1.1 lbs skinless chicken breast cut into bite size cubes
  • 2 tablespoon peanut oil
  • Salt as required

Vegetables:

  • 2 medium size onion cut into 1 inch cubes
  • 1 large size green bell pepper cut into 1 inch cubes
  • 1/2 teaspoon minced garlic
  • 1/2 teaspoon minced ginger
  • 1 fresh red/green chili chopped

Sauce:

  • 3/4 teaspoon black pepper freshly ground
  • 3 tablespoon light soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon brown sugar
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon cornstarch
  • 2 tablespoon water/chicken broth

Instructions

  1. Marinate the chicken: In a bowl, mix chicken cubes with salt, cornstarch, and black pepper. Set aside for 15-20 minutes.
  2. Prepare the sauce: In a separate bowl, combine black pepper, light soy sauce, dark soy sauce, rice vinegar, brown sugar, sesame oil, cornstarch, and water/chicken broth.
  3. Cook the chicken: Heat oil in a pan, add marinated chicken and cook until golden brown. Remove from pan.
  4. Stir-fry vegetables: In the same pan, sauté onions, bell peppers, garlic, ginger, and chili until slightly tender.
  5. Combine everything: Add cooked chicken back to the pan, pour the sauce over, and stir well. Cook until the sauce thickens.
  6. Serve: Garnish with green onions and serve hot with rice or noodles.
