Ingredients

Scale

Egg Roll Filling

  • 1 lb Ground pork – Sub: ground turkey/chicken
  • 2 cups Napa cabbage – Salted and squeezed dry
  • 1 cup Carrots – Shredded
  • 3 Green onions – Thinly sliced
  • 1 tablespoon Fresh ginger – Grated
  • 2 Garlic cloves – Minced
  • 2 tablespoon Soy sauce – Or tamari for gluten-free
  • 1 teaspoon Sesame oil – Optional for extra flavor
  • 1 teaspoon Cornstarch – Secret moisture control trick

Wrappers

  • 24 Egg roll wrappers – Can sub spring roll wrappers

For Frying

  • As needed Vegetable oil – For deep frying
  • Optional Peanut oil – Adds depth of flavor
  • 1 Egg white – For sealing and brushing

Dipping Sauce (optional)

  • 2 tablespoon Soy sauce
  • 1 tablespoon Rice vinegar
  • 2 tablespoon Sweet & sour sauce
  • 1 teaspoon Hot mustard – Optional kick

Instructions

  1. Prepare the Filling: In a large bowl, mix together the ground pork, Napa cabbage, carrots, green onions, ginger, garlic, soy sauce, sesame oil, and cornstarch.
  2. Assemble the Egg Rolls: Place a spoonful of the filling onto each egg roll wrapper, fold the sides over the filling, then roll up tightly, sealing the edges with egg white.
  3. Fry the Egg Rolls: Heat vegetable oil in a deep fryer or large pot to 350°F. Fry the egg rolls in batches until golden brown and crispy, about 3-4 minutes per side. Drain on paper towels.
  4. Make the Dipping Sauce: In a small bowl, mix together soy sauce, rice vinegar, sweet & sour sauce, and hot mustard.
  5. Serve: Serve the egg rolls hot with the dipping sauce on the side. Enjoy!

Notes

  • You can customize the filling by adding other vegetables like mushrooms, bell peppers, or water chestnuts.
  • For a healthier option, you can bake the egg rolls in the oven instead of frying them.
