Streusel:
- 1/3 cup rolled oats
- 1/4 cup white whole wheat flour
- 1/4 cup brown sugar
- 1 teaspoon pumpkin pie spice
- 1/2 cup pecans, roughly chopped
- 3 tablespoons butter, melted
Instructions
- Prep: Preheat oven to 350 degrees F. Grease an 8×8-inch cake pan. Line with parchment paper.
- Make the streusel: Combine oats, flour, sugar, spice, and pecans. Drizzle melted butter, mix until clumps form.
- Dry ingredients: Blend oats to flour, mix with wheat flour, spices, baking powder, baking soda, and salt.
- Wet ingredients: Whisk eggs, butter, syrup, vanilla, buttermilk. Stir in grated apples.
- Combine: Mix wet into dry ingredients, fold gently. Pour into pan, add streusel.
