Description

This Easy One Pot Creamy Tomato Pasta is a quick and delicious meal that combines the flavors of fresh tomatoes, garlic, and basil with creamy double cream. Perfect for a comforting weeknight dinner!

Main Ingredients:

  • 250 g (1/2 lb) uncooked spaghetti
  • 500 g (1 lb) fresh tomatoes, chopped (or use 1 x 400 g tin of chopped tomatoes)
  • 2 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 onion, finely chopped
  • 500 ml (2 cups) chicken or vegetable stock, use stock cube for convenience
  • 150 ml (3/4 cups) double cream
  • 1/2 bunch fresh basil

Instructions

  1. Cook Pasta: In a large pot, cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. Prepare Sauce: In the same pot, heat olive oil over medium heat. Add garlic and onion, sauté until fragrant. Add tomatoes, stock, and basil. Simmer for 10 minutes.
  3. Finish Dish: Stir in cooked pasta and cream. Cook until heated through. Serve hot, garnished with fresh basil.
